Quando tinha 12 anos, fui acampar com meus primos num ilha aqui no RJ e como eles pescavam de apinéia era sempre um banquete. Me lembro bem que trouxeram uma lagosta viva e de pronto abriram.  Pegamos o molho shoyo e comemos ali mesmo na praia um dos shashimis mais saborososque já experimentei.&lt;br /&gt;Parece que é comum servirem no Japão o sashimi com esses peixes ainda se mexendo. Os outros 40%, apesar de aprovados, apresentaram microorganismos que podem causar doenças, mas não são citados na legislação.&lt;br /&gt;&lt;br /&gt;Esses microorganismos foram considerados nos resultados da pesquisa porque Martins conhece casos de intoxicação alimentar no Japão por ingestão de peixes crus contaminados por eles. No entanto, não acredita que todos os consumidores correm riscos. Nunca tinha visto um Hosomaki de Ameixa antes, mas pela consistencia e aparencia (quem não diria que é um Hosomaki de Salmão) fica bastante interessante. Como em qualquer forma de arte, entre as quais a culinária não deixaria de estar, existem diversas correntes, estilos, "regras", o eterno conflito entre o tradicional e as &lt;b&gt;experiências&lt;/b&gt;. Sem pretensões... tudo isso pra dizer que adoro sushi e a culinária de uma forma geral e tenho uma relação muito lúdica com esse processo criativo. Espero aqui trocar ideias e experiências com as pessoas que curtem "gastar" um tempo na cozinha. Não é sempre que possuimos todos os ingredientes, mas isso não restringe a ideia de reinventar e fazer de toda refeição, um banquete !&lt;br /&gt;&lt;div&gt;Esse sushi fiz com shitake é bem simples. &lt;/div&gt;&lt;div&gt;&lt;ul&gt;&lt;li&gt;Faça o arroz japones temperado para sushi com vinagre, açúcar, sal e kombu (alga).&lt;/li&gt;&lt;li&gt;Refogue os shitakes (secos mas devidamente hidratados, embora ache que os frescos sejam mais saborosos) com alho, azeite. Ervas frescas caem muito bem.&lt;/li&gt;&lt;li&gt;Pode-se acrescentar o wasabi (raíz forte) entre o bolinho e o cogumelo. &lt;/li&gt;&lt;li&gt;Depois, com uma tirinha de nori e amarre-os.
